Contrast refers to the range between black and white.  At the highest setting, the scanner records gray shades as either black or white, with no gray shades at all.  At the lowest setting, the scanner detects the full range of gray shades in the original.

Brightness is the degree of whiteness.  The Brightness setting controls how light or dark the overall image is.  At a high setting, fewer pixels are recorded as black, so the image is lighter.  At a low setting, more pixels are recorded as black, so the image is darker.
